How To Make Christmas Cookies For Kids

How To Make Christmas Cookies

Sugar Cookies

Ingredients

100g unsalted butter (softened)

100g caster sugar

2 eggs

1tsp vanilla extract

30g cornflour

300g plain flour

Method

Step 1

Beat the butter and sugar with an electric whisk for 4 minutes until fluffy. Beat in the eggs, one by one, then add the vanilla extract. Whisk in the cornflour and plain flour until the mixture turns into a dough. Put the dough between two pieces of baking parchment, and roll out to a 6mm thickness using a rolling pin. Chill for 30 minutes.

Step 2

Heat the oven to 200C/180C fan/gas 6. Peel the top layer of parchment off the dough and stamp out circles using a 6cm round cookie cutter. Re-roll any offcuts and continue stamping out cookies until all the dough is used.

Move the cookies to a second large baking sheet lined with baking parchment, spacing them 2cm apart (you may need two sheets). Bake for 7-10 minutes. Leave to cool on the sheet for 15 minutes, then continue to cool on a wire rack. It will keep in an airtight container for one week.

Chocolate Orange Cookies

Ingredients

225g butter (softened)

80g icing sugar

1 orange (zested and 1/2 juiced)

300g self-raising flour

40g cocoa powder

175g dark milk or milk chocolate

40g chopped candied orange peel

5 strips sugared candied orange peel, each cut into 5 pieces

1-2 tbsp milk

Method

Step 1

Beat the butter with an electric whisk until fluffy. Next, beat in the icing sugar a little at a time, adding the orange zest and 1 tbsp orange juice. Then, beat in the flour and cocoa slowly and mix in the chocolate and orange peel and 1-2 tbsp milk.

Step 2

Divide the mixture in half and mould it into a rough log shape on a piece of non-stick baking parchment. Next, use the wrap to shape each piece into a log around 15cm long. Chill until firm - for about 2 hours.

Step 3

Heat the oven to 180C/160C fan/gas 4 and line two baking sheets. Cut 0.5cm thick cookies from the dough and place them on the baking sheets - Don't forget to leave space so they can puff up and spread. Place a piece of sugared candied orange on top of each. Bake for 10-15 minutes or until the cookies are puffed. Cool on the sheets for a couple of minutes before moving them onto a wire rack.

Snowman Biscuits

Ingredients

125g butter (softened)

125g golden caster sugar

1 egg (beaten)

1 tsp vanilla extract

250g plain flour (plus extra for dusting)

For Decoration

400g white fondant icing

Icing sugar (for dusting)

100g pack mixed red, yellow, black and blue ready-to-roll icing

Tube white icing, for sticking

Tube black icing

Method

Step 1

Heat the oven to 190C/170C fan/gas 5 and cream the sugar and butter until it turns light and fluffy. Next, beat in the egg and vanilla extract. Stir in the flour and mix until it's a soft dough. Tip onto a lightly floured surface and gently knead. Put the dough on a plate, cover and chill for 2 hours minimum.

Step 2

On a lightly floured surface, roll out the dough to a 0.5cm thickness. Use a cookie cutter to stamp out 7cm sized cookies. Re-roll the trimmings and repeat.

Step 3

Place the biscuits on two lined baking trays and bake for 8-14 minutes until the edges turn light brown. Leave to cool.

Step 4

To decorate the biscuits, roll out the white fondant icing onto a lightly dusted surface. Stamp out 7cm circles with the same cookie-cutter as before, then use a light splodge of white icing to stick a fondant around each biscuit.

Step 5

Knead the yellow and blue icing together to make green, and do the same for the red and yellow to make orange. Roll out one icing colour at a time and stamp out a 7cm circle, cut in half and use as the snowman's hat. Cut another stripe of a different colour and make some marking to make it look like the elasticated band of a hat. Repeat with all the cookies, mixing and matching the colours.

Step 6

Decorate the hats with different patterns - such as spots and stripes. Roll balls of coloured icing and poke holes all over with a cocktail stick and add on as pom poms. Shape lumpy balls of orange icing for the noses and roll out small balls of black icing for the eyes. Press down to flatten and stick on with white icing. Use the black icing tube to pipe on a smile. Leave to set.
